I am Roopa from Syracuse, Ny. This is a recipe for Pumpkin Gojju. I learnt it from my mother. It is a simple recipe. Enjoy!

Pumpkin Gojju

Ingredients

Pumpkin (Orange) 1/2 Lb
Dried Red Chillies 4-6 (depending on how spicy you want your dish to be)
Tamarind Paste 1/4 tsp
Asafoetida (hing) 1 pinch
Mustard - 1 tsp
Curry leaves
Salt to taste

Method:

  1. Steam cook pumpkin in a pressure cooker. Remove.
  2. When cool, blend in a mixer the cooked pumpkin, red chillies and tamarind paste to a smooth paste.
  3. You may add around 1 tbsp of water. But do not add more water, the gojju should not be watery.
  4. Heat oil in a kadahi add mustard seeds.
  5. When the seeds splutter, add curry leaves and hing. Immediately pour over the paste, add salt and mix well.

Goes well with plain Rice or chapathis.
