Hi,
I am Lata Gopinath from Kuwait. I am living with my husband and two daughters in the State of Kuwait. Cooking is my hobby and I am sharing one of my husbands favourite food. Its very easy to prepare and I hope you will love it.

Potato Stew

Ingredients

Potatoes - 3 Numbers (Chopped into big size)
Onion - 1 No. Sliced
Green Chillies - 2 or 3 as per taste (slit)
Ginger - 1" PC. Cut in julience.
Coconut Milk - 1 Cup
Curry Leaves
Coconut Oil - 1 Tsp.
Salt to taste

Method :

  1. In a heavy bottomed vessel, put in all potatoes, green chillies, ginger, salt, onion and cook till potatoes are done.
  2. Add in coconut milk and simmer for 2 to 3 minutes.
  3. Finally add curry leaves and coconut oil.
  4. Remove from fire.

Serve hot with idlis/rice/rice noodles.
