Hi, I am Yogita Miharia and I stay in Boston with my husband. Here is my first contribution to Bawarchi, a site which I simply love. This is a delicacy of Amravati (Maharashtra) the place to which I belong. It is called Sambharwadi as it has sambhar (the marathi name for cilantro) as its prime ingredient.

Sambharwadi

Ingredients

The filling:

100 gms Peanuts.
50 gms finely grated coconut.
200 gms chopped cilantro.
Cumin seeds.
Salt, Red Chilli powder, Amchur powder, Sugar as per your taste. (Take amchur and sugar in the proportion 1:2)
Oil.

The cover:

Maida, salt, Oil and water.

Method:

The cover:

Mix maida with salt and oil and knead the dough in water. You need to do this 1/2 hour prior to the preparation of sambharwadi.

The filling:

  1. Roast the peanuts, remove the skin and crush it to a coarse powder. (Please do not make a fine powder).
  2. Heat some oil, add the cumin seeds and let them splutter.
  3. Then add the grated coconut and roast for 1 or 2 minutes. See that the coconut does not turn brown.
  4. Then add salt, red chilli powder, amchur powder, sugar and mix well and let the masalas be roasted.
  5. Then add the peanut powder.
  6. Then add the finely chopped cilantro and mix well and roast for 2 minutes. The filling is ready.

The final assembly:

  1. Start heating the oil to deep fry.
  2. Take a small portion of the dough and roll in the shape of a chapati.
  3. Cut the curved edges to make it square shaped.
  4. Place the filling on it and cover in the form of a roll, join the edges well.
  5. Now put this in the hot oil and fry till golden brown.

Serve Sambharwadi hot with green chutney or green chillies. You will definitely love it.
