Hi, I'm Kavitha Kumar - a software engineer from Orange County - California. Trying out new dishes is one of my hobbies. The carrot cake recipe I've included here is very easy & can be prepared in a microwave instead of the traditional oven & it is fast too!! It takes 12-15 min in a microwave compared to 1 hour and above in a conventional oven.

Carrot Cake

Ingredients

1-1/2 cup flour (shifted)
2 tsp ground cinnomon
1-1/2 tsp baking soda
1 tsp nutmeg (optional)
1/2 tsp salt
3 cups grated carrot
1-1/2 cup sugar
1 cup oil
1 cup chopped walnuts (also use almonds or cashew too)
3 eggs beaten.

Method

  1. Sift together flour, cinnomon, soda, nutmeg, salt.
  2. Combine carrots, sugar, oil, nuts & eggs and blend.
  3. Add dry ingredients to the egg mixture & pour into 10" pan.
  4. Cook on high power in microwave for 10-11 min.
  5. If you feel the cake is unevenly cooking, keep changing the position of the pan.
  6. When done, the cake will pull away from the edges of the pan.

You can replace carrots with grated coconut for a coconut cake. And food color to the cake if desired.
