Vegetable Stew

Ingredients

1 bowl of all mixed vegetables (chopped)
(Beans, Cauliflower, Capsicum, Potatoes, Carrots, Peas etc..)
3 tomatoes
2 onions
1 tsp. ginger (finely chopped)
3 -4 green chillies (slit)
2 glasses of coconut milk
1/4 tsp cumin seeds
1/4 tsp. turmeric powder
1/2 tsp red chilli powder
1/2 tsp. garam masala powder (optional)
Salt to taste
1 tsp oil

Method:

  1. Boil all the mixed vegetables in 1 glass of coconut milk with 1/4 tsp turmeric powder and salt.
  2. In the mean time make a fine puree of the tomatoes, onions and chopped ginger.
  3. Heat the kadai, when it becomes hot pour the oil, then put the cumin seeds.
  4. When the cumin seeds are done, pour the puree into the kadai. Stir it for a minute. Allow it to cook. Then add the cooked vegetables and mix it well. Then add the chilli powder & garam masala powder. Allow it to cook for some time.
  5. When all the masalas and the vegetables have mixed together, pour the remaining 1 glass of coconut milk. Check the salt. (If required add a little). Then add the slit green chillies and cook it for a few minutes.

Serve hot. Garnish with chopped coriander leaves.

Vegetable Stew can be servered with chappatis, rotis, puris and also rice.
