Ridge Gourd Chutney (Hirekai)
Ingredients
Peel of ridge gourd -1 cup
Dry red chillies - 5- 6 in nos.
Sesame seed and dry coconut powder - 2-3 tbsps
Dry roast sesame seeds and dry coconut powder and grind them together Tamarind paste -1 tsp
Jaggery - 1/2 tsp
Salt - as per taste
Water - small amount (if required)
Curry lvs - 5-6 lvs
For seasoning :
Oil - 2 tbsps
Mustard - 1/2 tsp
Turmeric - a little more than a pinch
Hing - a little more than a pinch
Method :
- Wash the ridge gourd thoroughly in hot running water.
- Peel it and fry it in two tbsps of oil along with a little salt dry red chillies and curry leaves.
- Fry it till the peel gets tender or cooked. Put the cooked peel, the above prepared powder, jaggery, tamarind, salt in mixer and grind to a fine paste.
Empty the contents into a container and add the seasoning.
Tastes excellent with rice, chapati dosa, stale jowar roti (bhakri) etc.
