This is Shanthi Santhakumar. I am a housewife, living in Fremont, CA. with my husband and two kids. This is a simple and tastey dish, which is one of my husbad's favorites.

Eggplant fry
Ingredients
Eggplant-1 (medium)-cut it into 2 inch slices
Tomato-1 (medium) cut it into long slices
Onion-1 (medium) cut it into long slices
Oil-1 tbsp
Mustard seeds-1/2 tsp
Cumin seeds-1/2 tsp
Chilli power-1/2 tsp
Turmeric power-a pinch
Cumin power-1/2 tsp
Salt
Coconut -1 tbsp (optional)
Method:
- Pour the oil in a frying pan.
- Then add the mustard seeds and the cumin seeds.
- After spluttering add the onion slices and fry them for a while.
- Add the tomato now. Then add the eggplant slices. Add the salt and turmeric power now and fry them for sometime.
- Now add the chilli powder, coconut (optional).
- Finally add the cumin powder. Now the dish is ready.
