Stuffed Brinjals
Ingredients
8 - 20 small brinjals (Eggplant)
4 tbl spoons fried Peanut powder
1 tsp red Chilli powder
1/2 tsp Jeera powder
1/2 tsp Dhania powder
1/2 tsp Garam masala
4 -5 tbl spoons Oil
Salt to taste
Coriander leaves for garnish
Method :
- Cut the brinjals lengthwise in 4 parts from top but do not cut till the
base.
- Mix all the above ingredients with 1 tblsp oil and stuff in the brinjals.
- Fry the stuffed brinjals in low flame and keep the vessel covered.
- When done garnish with coriander leaves.
