American Spinach Pie
Ingredients
2 cups of finely chopped & par boiled Spinach
1 cup of finely chopped Onions
1/2 cup of finely chopped Green Chilies + Ginger + Coriander leaves
1/2 cup of fresh/frozen green peas
1/2 cup of finely diced carrots
1/2 cup of diced green capsicum
1/2 cup of finely chopped tomatoes
1 teaspoon of salted Amul butter
1/2 cup of shredded cheese
salt to taste
1 teaspoon black pepper powder
Optionally :
1/2 cup of mashed Paneer
1/2 cup of tender sauted Mushrooms
1/2 cup of tender fresh Olives
1/2 cup of diced Pineapple chunks or any minced meat/tuna/chicken etc.
For the pie crust::
1 cup twice finely sifted Maida
1 cup Milk
1 teaspoon Baking powder
1/4 teaspoon Salt
2 large Eggs (In USA we use "bisquick" instead of the maida & baking powder combination )
Method:
- Mix together all the chopped vegetables + salt + cheese + black pepper powder + butter in a greased baking dish.
- Whisk in a blender all the ingredients for the pie crust.
- Pour this whisked batter over the vegetable mix in the baking dish.
- Put the baking dish in a pre-heated oven at 300 degree F for 50 minutes -
whatever temperature you use for baking a typical bread/cake .
- Optionally you may want to cover the top of the dish with an aluminiuam foil.
- Take out from the oven when the top turns golden brown and the pie appears
firm.
- Cut into pieces & Serve hot with golden crust buttered toasts & tomato
ketchup.
Preparation time : 10 minutes
Cooking time : 50 minutes
