American Spinach Pie

Ingredients

2 cups of finely chopped & par boiled Spinach
1 cup of finely chopped Onions
1/2 cup of finely chopped Green Chilies + Ginger + Coriander leaves
1/2 cup of fresh/frozen green peas
1/2 cup of finely diced carrots
1/2 cup of diced green capsicum
1/2 cup of finely chopped tomatoes
1 teaspoon of salted Amul butter
1/2 cup of shredded cheese
salt to taste
1 teaspoon black pepper powder

Optionally :

1/2 cup of mashed Paneer
1/2 cup of tender sauted Mushrooms
1/2 cup of tender fresh Olives
1/2 cup of diced Pineapple chunks or any minced meat/tuna/chicken etc.

For the pie crust::

1 cup twice finely sifted Maida
1 cup Milk
1 teaspoon Baking powder
1/4 teaspoon Salt
2 large Eggs (In USA we use "bisquick" instead of the maida & baking powder combination )

Method:

  1. Mix together all the chopped vegetables + salt + cheese + black pepper powder + butter in a greased baking dish.
  2. Whisk in a blender all the ingredients for the pie crust.
  3. Pour this whisked batter over the vegetable mix in the baking dish.
  4. Put the baking dish in a pre-heated oven at 300 degree F for 50 minutes - whatever temperature you use for baking a typical bread/cake .
  5. Optionally you may want to cover the top of the dish with an aluminiuam foil.
  6. Take out from the oven when the top turns golden brown and the pie appears firm.
  7. Cut into pieces & Serve hot with golden crust buttered toasts & tomato ketchup.

Preparation time : 10 minutes
Cooking time : 50 minutes
Serves : 5 adults
