I am Anupama Budhiraja residing in Sacramento, CA with my husband. This is my first contribution to Bawarchi. As far as cooking goes, it is a hobby for both me and my husband. Here is one of our favourite recipes. Hope U enjoy it.

Tandoori Stuffed Aloo Paratha

Ingredients

The Stuffing for the Paratha:

2 boiled Potatoes
1 small finely chopped Onion (optional)
Coriander leaves finely chopped
Small piece of Ginger (very finely chopped or grated)
1 or 2 green Chillies (finely chopped)
Salt, Red Chilli powder and Graram masala as per taste.
Butter

For the cover:

Make dough out of wheat flour as you would do for any parantha/roti.

Method:

  1. Mash the potatoes.
  2. Add all the stuffing items to mashed potatoes and mix it properly.
  3. Make two medium size chapati, add the filling to the one chappati and cover it with the second one.
  4. Now roll it slightly.
  5. Put it in a pre-heated oven at 450 degree (broil). (Cover top tray with aluminium foil for easy baking)
  6. When top side is done change the side and keep a check (till properly baked)
  7. Spread butter over it.
  8. Serve hot with yogurt.
