This is Neelima Kulkarni from New Jersey. I live with my husband Ajay Kulkarni. I have two sweet daughters Mayura who is 4 years and Nitya who is 3 months old. Here is the recipe for Beetroot Soup which is a Russian delicacy and it is also known as Borsche. I learnt this recipe from my father who is a very good cook. Here is quick and easy recipe of borsche. This serves for 4 to 5 people.

Beetroot Soup
Ingredients
2 Beetroots
2 teaspoons Basamati Rice
2 tablespoons Butter
2 to 3 cups Water or Vegetable Stock
Salt Pepper
Method :
- First peel the skin of the beetroots and grate them.
- In a vessel melt the butter and add the grated beetroot and basmati rice and cook till it is soft and make sure it doesn't lose its colour. Then add water or the vegetable stock, salt and pepper and bring it to a boil till the grains of rice are soft.
- Serve hot with grated Cheese or dash of Butter.
