Simple Fruit Cake

Ingredients

375g fruit mix
300g plain flour.
300g soft brown sugar.
5 large eggs
1 tablespoon golden syrup.
1 tablespoon grated orange peel.
Silver foil (enough to line a 20 cm cake tin bottom and sides) method
300g good quality butter.

Method:

  1. Beat the sugar, butter and syrup till white and creamy.
  2. Add the grated orange peel.
  3. When mixed well, add the eggs one by one, beating well after each egg.
  4. Add the flour alternately with the fruit mix bit by bit till mixed well.
  5. Pour into the lined cake tin and bake in a preheated oven 150oC for two and a half hours.
