I am Meena Kumar from Miami. Cooking is interesting when u try out new recipes often, so here is a very simple & tasty picnic sandwich u will enjoy.

Picnic Sandwich

Ingredients

Bread 1 loaf
Cucumber 2 (sliced to disc shape)
Carrot 3 (sliced to disc shape)
Tomatoes 3 (sliced to disc shape and de-seeded)
Green chilies 5-6 (chopped fine)
Cilantro little chopped fine
Butter to spread
Mayonaise to spread
Salt to taste
Pepper to taste
Tomato ketchup
Green Chutney

Method:

Green Chutney : Grind cilantro leaves (1/4 bunch) with 4 green chili, salt & marble size tamarind to a paste adding very little water. Keep aside.

To make sandwiches:

  1. Trim the edges of the bread slices.
  2. On one bread slice spread good amount butter, thin layer of green chutney and place sliced cucumber & carrots.
  3. For the second layer place another buttered bread slice, to it spread some mayonnaise and place sliced tomatoes & carrots.
  4. Top with green chilies, cilantro and sprinkle little salt & pepper.
  5. Now to another bread slice spread butter and little ketchup, place this on top layer, press the sandwich a little and cut to triangle shape.
  6. Repeat the same for the rest of the bread loaf.

Now your sandwiches are ready. Have a great picnic!
