Hyderabadi Brinjals

Ingredients

6 small Brinjals with stalks
1 tblsp Coriander seeds
1 tblsp Cumin seeds
1 tsp Mustard seeds
1/2 tsp Cumin curry leaves
1 tsp ground Ginger
2 tsp Chilli Powder
4 tblsp Coconut grated
1 tsp Chirongi Nuts
1 tsp Poppy seeds
1 tblsp Sesame seeds
2 tblsp Groundnuts [rosted]
1 tsp Turmeric Powder
30 ml Tamarind extract

Method:

  1. Slip brinjal without breaking stalks and fry.
  2. Roast and powder coriander and cumin[A]
  3. Grind together coconut, chironji nunts, poppy seeds and sesame seeds [B]
  4. Heat oil in a large pan, splutter mustard and then cumin and curry leaves. Cover pan, remove from heat and allow to cook for few minutes.
  5. Now add ginger, garlic, turmeric, chilli and cook stirring continuously.
  6. Add [B] masala and bringal and cook on sim. Do not stir but shake occasionally.
  7. Pour tamarind pulp, [A] masala, shake pan and cook covered on sim for 15 minutes. Do not reheat.

Serve it with Rice/Roti.
