Hyderabadi Brinjals
Ingredients
6 small Brinjals with stalks
1 tblsp Coriander seeds
1 tblsp Cumin seeds
1 tsp Mustard seeds
1/2 tsp Cumin curry leaves
1 tsp ground Ginger
2 tsp Chilli Powder
4 tblsp Coconut grated
1 tsp Chirongi Nuts
1 tsp Poppy seeds
1 tblsp Sesame seeds
2 tblsp Groundnuts [rosted]
1 tsp Turmeric Powder
30 ml Tamarind extract
Method:
- Slip brinjal without breaking stalks and fry.
- Roast and powder coriander and cumin[A]
- Grind together coconut, chironji nunts, poppy seeds and
sesame seeds [B]
- Heat oil in a large pan, splutter mustard and then cumin and curry
leaves. Cover pan, remove from heat and allow to cook for few minutes.
- Now add ginger, garlic, turmeric, chilli and cook stirring continuously.
- Add [B] masala and bringal and cook on sim. Do not stir but shake occasionally.
- Pour tamarind pulp, [A] masala, shake pan and cook covered on sim for
15 minutes. Do not reheat.
Serve it with Rice/Roti.
