This is Priya once again. This time I would want to share with you the Zukkini Cake, which happens to be my Husbands favourite. Enjoy baking & relish its taste.

Zukkini Cake

Ingredients

Zukkini 2 cups (grated)
Self raising flour /maida 3 cups
Eggs 3 nos
Brown sugar 1 cup
Sugar 1 cup
Vanilla essence 1 tsp
Cinnamon powder 1 tsp
Raisins, Nuts 1/2 cup
Oil 1 cup
Baking soda 1/2 tsp
Baking powder 1/2 tsp
Salt to taste

Method:

  1. Sieve the Flour/maida along with baking powder once
  2. Beat the Eggs until fluffy & put it in a bowl
  3. Then add Sugar, Brown sugar, Oil & Churn it well. Then add the flour & zukkini & churn it
  4. Now add the essence, cinnamon powder, salt, raisins, nuts & churn it very well for 5 min.
  5. Grease a Baking tray with little Ghee/ Butter. Dust it with flour so that the cake does not stick once it is baked.
  6. Pour the batter only until half way mark of the tray (this is because, if the whole batter is poured then once the baking process begins, then the batter will start to overflow from the try)
  7. Pre-heat the oven at 400 degrees C & then bake for 50 min. Once the cake is baked, take it out place it on a plate. Cut it & relish it. Your Zukkini Cake is ready.

Note: Cinnamon is a must, if there is no cinnamon then the cake will just taste like a very normal cake.
