Hai,
I am Vidhya again with another new recipe. My earlier ones were Masala Gobi and Ras Vaangi. Thanks to Bawarchi for encouraging all its viewers. There are so many contributions which you can try out. Most of it comes out excellently and the best is you can always use very simple ingredients which you have at home. I wish you would all enjoy this dish. Happy cooking!!!

Spicy Brinjal

Ingredients

2 large Brinjals
1 small Tomato
2 Green Chillies
1 small lime size ball of Tamarind soaked in 1 cup water
1 teaspoon broken Urad dal
1 teaspoon Channa dal
Half teaspoon of Methi seeds and Mustard seeds
1 teaspoon of home made Sambhar Powder
A pinch of Asafoetida
Salt to taste
Curry leaves and Coriander leaves for garnishing
1 teaspoon of Besan

Method:

  1. Slightly apply any edible oil on the brinjal and roast it on slow flame on the gas oven. Those having microwave can keep it on high for 4 mts. (But it tastes better when on the gas)
  2. Chop tomatoes very finely and cut chillies into large pieces
  3. Let the brinjal cool down, peel off the skin and mash it.
  4. Take a heavy bottomed pan and pour in a little oil. Put in all the seeds for seasoning. Now put the green chillies and tomatoes. Let it cook for a while.
  5. Add the mashed brinjal and stir fry on low flame for 2 mts. Put in sambhar powder and add salt, asafoetida and curry leaves. Lastly pour in the tamarind water. Now make a paste of besan with very little cold water. Add it to the boiling gravy. Check the consistency and adjust accordingly.
  6. Now garnish with coriander leaves and serve hot with plain Rice, Pongal, dry Phulka or Idlies.

Cooking time: 15 mts.
