Mushroom Manchuri
Ingredients
Corn flour 3/4 cup
Rice flour 1 tsp
Gram flour 2 tsp
Chili powder 1 tsp or as required
Color a pinch
Salt as per taste
Mix this well with little amount of water and make a thick batter
Ginger 6 inch chopped very thin
Ginger paste 1 tsp
Garlic 1 bulb chopped very thin
Garlic paste 1 tsp
Green chillies 10 chopped very thin
Sauces:-
Tomato sauce 1/2 cup
Soya sauce 2 tsp
White Vinegar 1 tsp
Salt for taste
Coriander finely chopped
Oil to fry
Mushroom 1/2 kg
Method:
- Heat oil in a heavy pan. Dip the mushroom (full or halved) in the
thick batter, fry them and keep a side. After a minute again put the
fried mushroom in frying pan fry them for a couple of minutes and strain.
- Fry ginger and garlic paste for few seconds then add chopped
ginger, garlic and chillies and fry in medium flame till raw smell goes,
do not brown them.
- Now add all the sauces and salt together and boil it
just for a second and take away from the flame and add it to the fried
mushroom and garnish it with coriander. Serve hot.
Note :-
Mushroom should be fried twice so that it becomes crisp.
The same can be done with Gobi (Cauliflower) for Gobi Manchuri.
