I am ShilpaGopinath from MI, US. I would like to share with you the recipe for Brinjal Vindali, the South Indian style. My mother-in-law taught me this recipe. It tastes awsome. This is a very delicious dish and takes considerable amount of time. But its worth it. This would be an excellent treat for brinjal lovers. Brinjal Vindali

Ingredients

Brinjal - 8 no
Ginger - 1" piece
Garlic pods - 5 medium size
One big Onion (Half fine chopped and half chopped big for grinding)
Tomato - 1 big
Dhaniya powder 1/2 tsp or Dhaniya seeds 1 tsp
Red chillies - 8 no or 3/4 tsp Red Chilli powder
1/4 tsp Haldi powder (turmeric)
One pinch Asafoetida
Jeera - 1tsp
Pepper corns - 1/2 tsp
Cinnamon - 1/2"
Cloves - 2
Jaggery powder - 2 tsp
Tamarind extract - 1 tsp
Chanadal - 1 tbsp
Groundnuts fried - 1 tbsp
Coconut grated - 1 tbsp
Methi pwd - 1/4 tsp
Curry leaves
Salt to taste

Method:

  1. Cut brinjals longitudinally each into 6 and take care that the pieces are still attached to the stalk.
  2. Soak the cut brinjal in salt water.
  3. Fry onion, ginger and garlic till onion turns translucent. Grind it and keep aside.
  4. Fry methi powder, red chillies, coconut grated, groundnuts, pepper corns, dhaniya, jeera, cinnamon, clove with oil. And wetgrind them coarsely.
  5. Heat the pan with 4 tsp oil, add mustard, jeera, fine chopped onion, curry leaves and fry till golden brown
  6. Now add the brinjal, salt, Jaggery and tamarind extract and fry it for 4 minutes and add ground masalas 1 and 2. Cook till the brinjal becomes tender, in low flame.

Delicious Vindali brinjal is ready to be served with Plain Rice, Nan or Roti.
