Haakh (Kashmiri dishes)
Ingredients
a.. Collard greens : 1 bunch
b.. oil ; 1 tbsp
c.. Salt to taste
d.. Hing : 1/2 tsp.
e.. Green chillies: 1 - 2
f.. Ver : 1/4 tsp. (opt.)
METHOD
- Wash, clean and cut the greens in pieces.
- In the meantime boil 2-3 cups of water in a pressure cooker.
- Add salt and hing to the boiling water.
- Add the collard greens slowly, stirring at the same time.
- When you see it boiling again, close the lid and pressure cook it
till you hear 3 -4 whistles (10 min minimum).
- Remove the lid right away by putting the cooker under running
water. Then open the lid. and put the cooker back on the flame. Let it
come to a boil again. Add the green chillies to it.
- Transfer it to a bowl.Sprinkle the ver on it.
- Serve it with rice and any other accompaniment to go with it.
Note: Ver is a special blend of spices, used in a few kashmiri
dishes, which is mixed together and dried. It comes in the form of flat
round tikkas. They are not available in the market. If interested, You
