Hi! My name is Ruby Saraf, and I am from Chicago. I hope you liked my non - veg dish named Kalia. It is a very authentic Kashmiri dish. Today I would like to send a very popular kashmiri veg. preparation which is cooked almost every day in a Kashmiri household as a side dish to go with the rice. It is called Haakh or Saag. It is called collard greens and can be found in every grocery store. It preparation is very simple, and it is very healthy too.

Haakh (Kashmiri dishes)

Ingredients

a.. Collard greens : 1 bunch
b.. oil ; 1 tbsp
c.. Salt to taste
d.. Hing : 1/2 tsp.
e.. Green chillies: 1 - 2
f.. Ver : 1/4 tsp. (opt.)

METHOD

  1. Wash, clean and cut the greens in pieces.
  2. In the meantime boil 2-3 cups of water in a pressure cooker.
  3. Add salt and hing to the boiling water.
  4. Add the collard greens slowly, stirring at the same time.
  5. When you see it boiling again, close the lid and pressure cook it till you hear 3 -4 whistles (10 min minimum).
  6. Remove the lid right away by putting the cooker under running water. Then open the lid. and put the cooker back on the flame. Let it come to a boil again. Add the green chillies to it.
  7. Transfer it to a bowl.Sprinkle the ver on it.
  8. Serve it with rice and any other accompaniment to go with it.

Note: Ver is a special blend of spices, used in a few kashmiri dishes, which is mixed together and dried. It comes in the form of flat round tikkas. They are not available in the market. If interested, You can contact me on my e- mail address sarafsz@mediaone.net to place an order.
