Hi,
My name is Tanuja Khadilkar and this is my first recipe going 'live' on the web. I learnt this simple yet very nutritious recipe from my aai, Jayashree Khadilkar. As kids, and sister and I used to sneer at the idea of eating the white pumpkin curry, so my mom had this wonderful way out by preparing the soup. Serve your guests with this delicious soup and keep them guessing the Savoury Soup.

Savoury Soup

Ingredients

1 medium Fresh White Pumpkin (Dudhi / White Gourd)
2 medium Tomatoes
1/4 cup Moong Dal
Salt
Fresh Ground Pepper
Coriander / fresh Parsley for Garnish
2 sticks Celery, peeled and diced (Optional)

For White sauce

1 Tsp Butter
1 Tbsp Milk
1 Tbsp Wheat/Corn Flour

Method:

  1. Slice the Pumpkin into medium pieces.
  2. Cut Tomatoes into quarters so that it is easier to remove the skin once they are cooked.
  3. Mix Pumpkin, tomatoes and moong dal in a vessel and add about 2 cups of water
  4. Pressure cook the Pumpkin, Tomatoes and Moong dal together (in a pressure pan/cooker)
  5. Let cool the mixture for a while. Unpeel the tomatoes.
  6. Blend the mixture in a mixie.
  7. Prepare the white sauce by first heating the butter, then add the flour and stir continuously. Finally, add milk and let bring it boil.
  8. Stir in the blended mixture into the white sauce and bring to a boil.
  9. Garnish with Coriander/Parsley
  10. Serve hot with Croutons / Bread sticks.
