Quick Baigan Bharta

Ingredients

1 big Eggplant
2 big Tomatoes finely chopped
1 big Onion finely chopped
3 cloves of fresh Garlic
2 small fresh Green chilies, finely chopped
1 tsf Garam masala
1/2 tsf Turmeric powder
1/2 tsf Coriander powder
1/2 tsf Jeera
1 tbs Oil
Salt to taste
Chopped Coriander leaves for garnish

Method:

  1. Wash the eggplant, make 5 to 6 vertical fine cuts on the skin along its length. Microwave it for 8-10 min. With spoon, scoop out the eggplant and through away the skin.
  2. Heat the pan, add oil, jeera, garlic, chilies and onions. Fry it until golden brown.
  3. Add finely chopped tomatoes, and cook for 2-3 min.
  4. Add turmeric, coriender powder, garam masala
  5. Add the eggplant and stir the mixture, add salt to taste. Cook it on medium heat for 5-6 min.
  6. Garnish with Chopped Coriander leaves, Serve hot over Roti or Chapati.
