Stuffed Brinjal
Ingredients
Brinjals Small ones - 12
Oil- 4 tbsp
For the stuffing
Coriander seeds - 4 tbsp
Fenugreek seeds - 1 tsp
Urud Dhal- (black gram) 4 tbsp
Chana dhal (yellow lentils)-4 tbsp
Red Chillies - 7
Black Pepper - 1/2 tsp
Tamarind - size of a small lemon
Asafoetida - 1 tsp
Salt to taste
Sugar-2 tsp
Method
- Wash the brinjals and slit them in the center removing the stem and keep aside.
- Fry all the ingredients for the stuffing and powder it finely.
- Add the required salt and mix well.
- Fill the brinjals with the prepared powder and
brush the dish with oil and arrange in a microwavable dish.
- Microwave it
high for 6 minutes covering the dish with cling film.
- Let it stand for 5 minutes.
- Heat a frying pan, add 2 tbsp of oil and when it is hot add the stuffed and
cooked brinjals. Without disturbing the brinjals stir lightly and let it
fry for 5 minutes.
- Take out and arrange in a dish and it is ready to decorate
the party table.
