Stuffed Brinjal

Ingredients

Brinjals Small ones - 12
Oil- 4 tbsp

For the stuffing

Coriander seeds - 4 tbsp
Fenugreek seeds - 1 tsp
Urud Dhal- (black gram) 4 tbsp
Chana dhal (yellow lentils)-4 tbsp
Red Chillies - 7
Black Pepper - 1/2 tsp
Tamarind - size of a small lemon
Asafoetida - 1 tsp
Salt to taste
Sugar-2 tsp

Method

  1. Wash the brinjals and slit them in the center removing the stem and keep aside.
  2. Fry all the ingredients for the stuffing and powder it finely.
  3. Add the required salt and mix well.
  4. Fill the brinjals with the prepared powder and brush the dish with oil and arrange in a microwavable dish.
  5. Microwave it high for 6 minutes covering the dish with cling film.
  6. Let it stand for 5 minutes.
  7. Heat a frying pan, add 2 tbsp of oil and when it is hot add the stuffed and cooked brinjals. Without disturbing the brinjals stir lightly and let it fry for 5 minutes.
  8. Take out and arrange in a dish and it is ready to decorate the party table.
