Spinach' Mushroom Enchiladas

Ingredients

Frozen / Fresh Spinach : 500 gms
Mushroom : 250 gms
Tomato Paste : 3 tbsp
Salt to taste
Red Chilli powder : 1 tsp
Black Pepper powder : 2 tsp
Butter : 3 tbsp
Tortillas (Big/Small) : 4 nos.
Cheddar Cheese : 250 gms

Method :

  1. Wash & Cut Spinach. Please don't do Vice Versa & then Wash & cut Mushroom into thin slices.
  2. Cook Mushroom separately from Sipanch as take butter in fry pan, pour tomato paste, salt/ chillpowder & saute for 5-7 minutes or till dry.
  3. Now for Spinach - take butter in pan put Salt & black pepper powder. Now add spinach & saute till dry. Don't cover & cook.
  4. Take Tortilla 1 at a time & roast like chapati on griddle. Keep aside.
  5. Grease little butter & pour cheese
  6. Now put a layer of spinach followed by mushroom & roll keep 2 rolls each in a plate & grease these rolls from outside, spread butter & cheese liberally.
  7. Warm up in Micro for about 1 1/2 min.
  8. Serve hot with any Kind of Soup, Sauce or even Asparagus for a change. Yum!
