Hi,
My name is Nirmala. I live in Schaumburg, with my one year old daughter Meghana and my husband Mohan. Here is a recipe of Spinach Lasagna given to me by a friend. I tried this one and it is one of our favorite food. If you have any comments please e-mail me at N756@aol.com

Spinach Lasagna

Ingredients

1/2 pound Part Skim Ricotta Cheese
One 10 oz package Frozen Chopped Spinach, cooked according to package directions on package and well drained
1 Egg
1/4 teaspoon grated Nutmeg
Salt and Pepper to taste
1/2 pound Lasagna Noodles
2 cups Italian Tomato Sauce
1/2 pound Part Skim Mozzarella Cheese, grated

Method :

  1. Mix ricotta cheese, spinach and egg.
  2. Add nutmeg, salt and pepper.
  3. Cook lasagna noodles according to package directions.
  4. Cover bottom of (8" by 5" by 2") baking dish with thin layer of tomato sauce. Then arrange a layer of noodles in dish. Then add a layer of spinach mixture.
  5. Add a layer of tomato sauce. Sprinkle with grated cheese. Repeat this procedure until all the ingredients are used.
  6. Bake at 350 degrees for 30 minutes or until bubbly.
  7. Serve with tossed green salad and Italian bread.
