Varutta Erra Kolumbu

Ingredients

Shrimps -- 500-700 gms
Ground Ginger--1/4 Tsp
Egg White--1 no
Corn flour--1 1/2 Tsp
Oil-- 5 Tbsp
Salt --1 1/2 Tsp

For the Kolumbu:

Chili Sauce - 2 Tbsp
Tomato Puree-- 3 Tbsp
Soya Sauce -- 1 1/2 Tbsp
Chicken Stock--2 Tbspn
Cornflour--2 Tbsp
Water--2 Tbsp
Dry Sherry-- 1 tbsp
Vineger -- 2 Tbsp
Ciliantro leaves--2 Tbspn Finely Chopped.

Method:

  1. Clean, cut the Shrimps into half, rub them with salt and ginger and keep aside for 15-20 mins. Make a batter outof egg white and cornflour, coat the shrimps with it.
  2. Prepare the Kolumbu by heating the chilli sauce, tomato puree, soya sauce, dry sherry, vineger and chicken stock. Make a paste with 2tbspns of cornflour and water, add this mixture while boiling and stir well till it thickens.
  3. Heat the oil and fry the shrimps till light brown, drain it in the absorbent paper. Put these shrimps into the kolumbu. Let the kolumbu comes to a boil before serving, garnish it with the green cilintro leaves.
