Reshmi Kebab

Ingredients

1 Kg. Chicken Mince
2 Eggs
1 tbs. Cumin Powder
1 tsp. Yellow Chilli Powder
1 tsp. White Pepper
4 tsp. Groundnut Oil
1/3 cup Cashewnuts
3 tbs. Ginger
2 tbs.Onions
1/3 cup Coriander
1 tsp Garam Masala
Butter for basting
Salt to taste

Method :

  1. Break eggs in a bowl & whisk them.
  2. Pound the cashewnuts with a pestle.
  3. Clean & wash the coriander.
  4. Peel wash & finely chop the ginger & onions.
  5. Add the whisked eggs, cumin, yellow chillies, white pepper, salt & oil to the chicken mince. Keep aside for 15 min.
  6. Pre-heat the oven to 300 degrees F (fahrenheit). Add the cashewnuts, chopped onions, ginger & coriander & garam masala. Mix well.
  7. Divide into 8 equal balls. Using a wet hand, spread the balls by pressing each along the length of the skewers 2" apart & making each kebab 5" long.
  8. Roast in the oven for 6 mins, basting once. (Time may vary from oven to oven.) Remove from the oven & serve hot with green chutney.
