Vegetable (salted) Muffin

Ingredients

Bisquick (or similar) Baking Mix : 2 cups
One cup steamed mixed vegetable (such as Broccoil, Carrots, Peas, Corn and Cauliflower), cut into small pieces.
2 Eggs
3 Tbsp Oil
3 Tbsp finely chopped Onion,
1 tsp Red Chilli powder,
2 tsp Salt (or according to your taste),
1 1/2 cup Milk.

Method:

  1. Beat the eggs thoroughly.
  2. Add all the ingredients and milk to make thick fluffy consistency batter.
  3. Grease the muffin pot (usually it will hold 12 muffins), and fill three-fourth of each cup with the batter.
  4. Bake it for 15 minutes at 375 degree Farenhit (190 degree Celcius) temperature.
  5. Let it cool and remove muffins from the cups.
  6. Serve hot with chutney, or ketchup.
