Vegetable (salted) Muffin
Ingredients
Bisquick (or similar) Baking Mix : 2 cups
One cup steamed mixed vegetable (such as Broccoil, Carrots, Peas, Corn and Cauliflower), cut into small pieces.
2 Eggs
3 Tbsp Oil
3 Tbsp finely chopped Onion,
1 tsp Red Chilli powder,
2 tsp Salt (or according to your taste),
1 1/2 cup Milk.
Method:
- Beat the eggs thoroughly.
- Add all the ingredients and milk to make thick fluffy consistency batter.
- Grease the muffin pot (usually it will hold 12 muffins), and fill three-fourth of each cup with the batter.
- Bake it for 15 minutes at 375 degree Farenhit (190 degree Celcius) temperature.
- Let it cool and remove muffins from the cups.
- Serve hot with chutney, or ketchup.
