Squidgy Pudding
Ingredients
1 cup chopped Dates
1 tsp Soda Bicarb
3/4 cup boiling Water
1 cup Sugar
50 gms Butter
1 Egg
150-175 gms Self Raising Flour
1/4 tsp Salt
Method
- Place dates, soda bicarb and boiling water in a small bowl and leave to soak for 15 minutes.
- Cream butter and sugar, add egg, flour, salt and date mixture. Pour into a
greased 9-inch dish and cook for 1- 1 1/4 hours at 375oF or 190oC.
- Pour syrup over the cake when cool and serve with cream.
Syrup
1 cup Sugar
1 cup Cold Water
1-2 tsp Vanilla Essence (depending on taste)
25 gms Butter
Heat water and sugar gently, then boil for 5 min. Add vanilla essence and
butter cool slightly. Pour the sauce over the cake while syrup is still
warm.
Note: Add some grated orange ring to the filling and use some for
decoration.
