Fried Brinjal
Ingredients
1 medium sized Brinjal (egg plant)
1/2 tsp Coriander-Cumin powder
1/2 tsp Red Chilli powder
1/2 tsp Turmeric powder
1/2 tsp Amchur (optional)
Salt to taste
Rice Flour-1/2 bowl
Oil for shallow frying
Method:
- Cut the brinjal into round slices and soak it in water.
- Drain the water completely and apply chilli powder, coriander-cumin powder , turmeric powder and salt to it.
- Heat a non-stick frying pan and add oil to it (enough for shallow frying)
- Dip the brinjal slices in rice flour so that they are covered from both sides
and then fry them in the pan till done and crisp on both sides.
- Sprinkle amchur powder and serve with Dal and Rice
Should be served hot only.
