Fried Brinjal

Ingredients

1 medium sized Brinjal (egg plant)
1/2 tsp Coriander-Cumin powder
1/2 tsp Red Chilli powder
1/2 tsp Turmeric powder
1/2 tsp Amchur (optional)
Salt to taste
Rice Flour-1/2 bowl
Oil for shallow frying

Method:

  1. Cut the brinjal into round slices and soak it in water.
  2. Drain the water completely and apply chilli powder, coriander-cumin powder , turmeric powder and salt to it.
  3. Heat a non-stick frying pan and add oil to it (enough for shallow frying)
  4. Dip the brinjal slices in rice flour so that they are covered from both sides and then fry them in the pan till done and crisp on both sides.
  5. Sprinkle amchur powder and serve with Dal and Rice

Should be served hot only.
