Hi!
This is Ruchira from Huntsville, AL. I often surf this site for interesting and easy recipes. I am not much of a cook, but I do like recipes that are quick, easy, wholesome and nutritious. Below is a recipe for Lentil soup (a recipe for the calorie conscious as well, since this contains very little fat) which my family likes a lot.

Lentil Soup

Ingredients

2 cups Black Lentils (kali masoor)
1 large Tomato chopped
1 medium Onion chopped
2 medium Carrots grated
1/2 cup mixed vegatables (Yellow Squash, Zucchini) chopped fine
Salt and Pepper to taste
1 teaspoon Jeera powder
2 teaspoons Olive Oil
Chopped Coriander for garnish
Water

Method

  1. Saute the onions in olive oil. When they begin to brown add the chopped tomatoes.
  2. Add the lentils and all vegetables with enough water.
  3. Cover and cook to achieve a liquid consistency keeping it on medium/low heat. Do stir it once or twice.
  4. Season it and before serving add the jeera powder and stir well.

Serve hot garnished with coriander accompanied by garlic toast or breadsticks.

For the not so calorie conscious you could add a dollop of sour cream in individual serving bowls.

PS: Once we served this with Potato tikkis and it was a complete meal.
