Easy Moong Usal

Ingredients

2 cups Moong (split or whole)
1 Onion, chopped
1 Tomato, chopped
1 Potato, boiled and chopped
1 tsp Sambhar Powder
1 tsp Garam Masala
1 tsp Ginger-Garlic paste
1-2 Green Chillies
1/4 tsp Mustard seeds
1/4 tsp Jeera seeds
A pinch of Hing
Oil to fry
Salt to taste

Method:

  1. Soak the moong for half an hour in water
  2. Drain the moong and pressure cook it for 3 whistles, with a little turmeric powder
  3. In a kadai, put the oil, mustard seeds, jeera seeds and hing. When they splutter, add the onions and fry till they are transparent
  4. Add the tomatoes, green chillies and ginger-garlic paste, fry for a minute
  5. Add the cooked moong, potato, sambhar powder and garam masala, mix well
  6. Add salt and cook for some more time.
  7. Garnish with coriander leaves.

Serve hot with Rice, Roti, Puri or Bread.

Tip: You can dilute the usal and use it as a dal or thicken it for a dry curry.
