Here is one more easy recipe for the traditional Gujarati food called HAANDAWO! It goes very well with afternoon tea or coffee or as anytime snack. It is very simple and nutritious with the added vegetables. E-mail your comments at lizy_solanki@hotmail.com

Instant Haandawo

Ingredients

2.5 cups of Dhokara flour (available in Indian stores)
1 tsp. Asafoetida
2 tsp. Baking Soda
Salt to taste
2 tbsp. Ginger-Garlic paste
1 tsp. Turmeric powder
Red Chilli powder to taste
1 cup Yogurt
1 cup Shredded Lauki (Zuccini, Carrots, Spinach, Cabbage like vegetables could be used as well)
1.5 cups warm Water
1 tbsp. Garam Masala
Sesame seeds for garnishing
Oil, Mustard seeds, whole Red Chilli for seasoning

Method:

  1. Preheat the oven at 400 degrees.
  2. Butter a loaf pan.
  3. Mix all the above ingredients except Sesame seeds and seasonings. Make smooth,thick paste, beating by a wirewhisk. Do not overbeat. The mix should be bubbly because of the baking soda.
  4. Heat the oil in a pan.
  5. Add the mustard seeds. When the seeds crackle, add whole red chilli.
  6. Let it turn black and then stir the seasoning in a Haandawa mix.
  7. Pour it in a loaf pan, sprinkle Sesame seeds on top of it and bake it for about an hour or until the centre is done (Check with the butterknife inserted in the middle, if it comes out clean, the Haandawo is done).
  8. Cut into pieces and serve warm with Tea or Coffee.
