Hello,
I am Lakshmi Jayaraman, originally from South India , but now living in London. I love cooking, and trying out new recipes. I liked many of the readers' contributions, and have tried quite a few. This recipe of mine is a sure success, as it cannot go wrong, as well as being very easy to make.Try it and do mail to me as to how you like it. My email address is lakshmi@waitrose.com. So , happy cooking!

Instant Almond Burfi

Ingredients

Blanched and dried Almonds- 100gms.(Soak the almonds for a few hours, remove the skin, and dry them on a dry cloth, to remove moisture)
Sweet bread slices - 4 to 5 pieces
Powdered Sugar - 150gms.
Milk powder 1 tsp
Milk - 2 tbsps.
Almond essence a few drops.
Yellow food colour - few drops (optional)

Method:

  1. The almonds must be powdered in the mixie, after they are dry and their skins removed. The bread slices should also be powdered in the mixie.
  2. Put all the ingredients in a heavy bottomed vessel (karahi) and keep it on a high flame. Keep stirring to avoid burning.
  3. Within 5 mins. the sweet will form into a soft ball. Put off the gas.
  4. You could spread it on a well greased plate, and cut in squares when cool. Or you could shape them, by pressing small balls of the sweet in little tart cups.
  5. Decorate the burfi with slivers of almonds, or grated pistas, or even tutti frutti or sultanas.

They taste great however, so happy cooking and eating.
