My name is Preeti and I am staying in Florida for past one year. I have been experimenting with different recipes and I came up with a very healthy and delicious one for a lasagna that suits both the formal and informal meal settings and the best part of it is that it take only about 45 minutes including the baking time.

Gardenstyle Lasagne

Ingredients

Lasagna 12 sheets (or enough to make atleast three layers)
Spaghetti Sauce 2 Cups (with onion and garlic)
Italian Seasoning Half tsp.
Garlic Powder 1/4th tsp.
Salt To taste
Vegetables - Fresh Onion, Cabbage, Baby Carrots, Capsicum, Red Bell Pepper, small amount of Broccoli, Mushrooms or any other veggies that you like. All vegetables can be diced beforehand to small pieces so that they are easy to saute.
Corn 1/2 Cup
Cheddar Cheese 1 Cup
Mozzarella Cheese 1/2 Cup
Olive Oil 3-4 tbsp.

Method:

  1. Boil the lasagna in water and a pinch of salt.
  2. While the lasagna is boiling, saute the vegetables and corn in olive oil till golden brown. Add Italian seasoning, garlic powder and salt to it and then keep them aside.
  3. In a casserole, coat the bottom and sides with olive oil.
  4. Once the lasagna is done, pour out the boiling water and separate the sheets so that they don't stick together.
  5. In the casserole dish, put enough sheets of lasagna so that they make a layer and cover the entire bottom. Spread the spaghetti sauce on this layer evenly. Now spread a layer on your done veggies evenly. After this sprinkle the grated cheddar and mozzarella cheese so that it make another layer. On top of this, make another layer with lasagna sheets and repeat the procedure.
  6. You need to make minimum 3 such layers. Once that done, cover with more cheese and set it in a pre-heated oven at 350 degrees for about 25-30 minutes.
  7. Serve with Warm Garlic Rolls and Corn.
