Fish Bake
Ingredients
500 gms. of Cod Fish Loin, cut into bite sized pieces
2 Green Peppers, thinly sliced
115 gms of Button Mushrooms, thinly sliced
1 small Onion peeled and finely chopped
175 gms of Carrots, thinly sliced
650 gms of peeled Potatoes
3 tbsp of Sunflower Oil
1 tbsp of fresh Parsley, chopped
100 gms of Cheddar Cheese, grated
50 gms of Plain Flour
1 cup of Milk
Method
- Prepare the Cheese Sauce, by mixing the grated cheese and flour in a
saucepan over medium flame. Once the flour turns brown add the milk stirring
continously till it becomes a thick sauce.
- Fry the onions till golden brown, then add the carrots, mushrooms and
peppers.
- Boil the potatoes for 15 - 20 minutes and mash it with a fork.
- Put half of the fried vegetables in a shallow oven proof dish, place the cod
fish in a layer over this and then layer it with the boiled and mashed
potatoes. Add the remaining vegetables on top of it. Layer this with the
cheese sauce. Add salt and pepper on top.
To make it more spicy add hot and sweet chilli sauce to each layer.
- Preheat the oven to 190oC/ 375oF/ gas 5. Bake for 1 hr. 30mts. until the top
is a light golden colour.
- Sprinkle with parsley before serving.
