Mint Veg Pulao
Ingredients
1. Basmati Rice - 2 cups
2. Carrot - 2 (cut into thin round slices)
3. Beans - 1 cup (cut into medium size pieces)
4. Green Peas - 1/2 cup
5.Onion - 1
6. Clarified Butter/Ghee - 3 tsp
7. Garlic paste - 1 tsp
8. Fresh ginger - 1/4" grated
9. Green Chillies - 4
10. Mint - 1/2 bunch
11. Cilantro/Coriander leaves - 1/4 bunch
12. Garam Masala (Cloves, Cinnamon, Bay leaves, Elaichi)
13. Fresh grated Coconut - 1/2 cup
14. Almonds - 10
15. Cashewnut - 10
16. Salt - to taste
Method
- Saute the garam masala in ghee for about 3 minutes & let it cool.
- Grind ingredients 7 to 14 in a blender until smooth.
- Cook the rice so that each grain is separate.
- In a heavy bottomed pan, add ghee & saute the onion for few minutes.
- Add the vegetables one by one & salt & allow them to cook until they are soft
adding little amount of water .
- When the vegetables are cooked ,add the ground masala & stir fry till the raw smell
leaves.
- Add the masala & the vegetables to the rice by layering alternatively.
- Garnish with roasted cahewnuts & mint leaves.
Serve this hot with Channa Masala & Cucumber Raitha. Happy cooking!!!
