Hi,
This is Gayatri Hariharan again with a very simple recipe for authentic Veg. Briyani. I gave this recipe to my bachelor cousin in Connecticut, who after trying it out at home said it was so easy to make and very tasty, of course. Hope you all find this one useful too.

Vegetable Briyani

Ingredients

Basmati Rice - 2 cups
Mixed Vegetables (frozen) - 1/2 lb
Big Onion - 1 (sliced lengthwise)
Tomatoes - 2 (finely chopped)
Turmeric Powder - half a teaspoon
Red Chilly Powder - 1 and a half teaspoon
Salt - to taste
Coconut grated (optional) - 3 tablespoons
Oil - 4 tablespoons

For Grinding:

Garlic - 2 flakes
Ginger - an inch
Cinnamon - 5 pieces
Cloves - 4
Cardamom- 2

Method:

  1. Wash rice and soak in 3 1/2 cups of water for 15 minutes in the electric rice cooker's vessel.
  2. Wash the frozen pack of vegetables in warm water and add it to the uncooked rice.
  3. Heat oil in pan , simmer the stove completely and add the ground paste first.
  4. Stir fry for 5 seconds and add the sliced onions and the required amount of salt.
  5. Once the onions start changing color to a golden brown, add tomatoes, turmeric powder and red chilly powder.
  6. Grind coconut into a fine paste with just enough water and add this also to the rice.
  7. Mix everything with a ladle well and just taste the masala water on top of the uncooked rice. It should taste extra hot and salty. Cook everything till done.
  8. Garnish with coriander leaves.
