I am Sudipta. I am a hardcore non vegetarian but I love to cook veg food. Here is a recipe for all you veggies -"masala baigan". I hope you will like this South Indian Dish. My e-mail is palitsudipta@hotmail.com

Masala Baingan

Ingredients

Brinjals 2 big
Potato 3 medium size
Onion 2 finely chopped
Garlic grated 1 tablespoon
Mustard 1/2 tbsp
Fenugreek Seeds 1/2 tbsp
Curry Leaves
Coriander Leaves
Sambar Masala 2 tbsp
Tamarind Paste 1 tbsp.
Oil 4 tbsp
Salt/Sugar as per taste.

Method:

  1. Cut the brinjals and pototo into small pieces.
  2. Take 2 tbsp of oil and fry the brinjals and potato until soft and keep it separately.
  3. Now take the rest oil and put the mustard and fenugreek seeds. When the seeds begin to crackle put the garlic and onion and the curry leaves. Fry the onion till brown.
  4. When the onion is done pour the fried brinjals and potato and mix thoroughly.
  5. Then add the tamarind paste salt and sugar and mix.
  6. Now add the sambar powder and before bringing down garnish with coriander leaves.

Serve hot with Rotis.
