I am Samita Bhave from Virginia. My earlier contributions were Maharashtrian Bharali Vaangi & Palak Bhaaji. I got e-mails from many of my 'bawarchi'mates asking recipe for Maharashtrian Goda masala which is used for Bharali vaangi. This masala is just like Garam masala. Can be used in curries, rice or moong khichadi. It has a very good flavour. Recipe follows:

E-mail : samita_bhave@hotmail.com

Maharashtrian Goda (Black) Masala

Ingredients

1/4 Kg Coriander seeds
1 cup Dry Coconut
200 gm White Sesame seeds
200 gm Black Sesame seeds
50 gms Shahjeera
50 gms Cumin seeds
1 teaspoon Asafoetida (hing)
1 stick of Cinnamon
2-3 Cloves
1 Masala Velachi
2 Dry Red Chillies
1 teaspoon Haldi & Salt to taste

Method:

  1. Roast all the ingredients except coconut & coriander seeds with a little amount of oil.
  2. Roast coconut & coriander seeds separately without oil.
  3. Now grind all these items together with a teaspoon of raw (unroasted) cumin seeds & salt to taste.
  4. Let it cool & store in an airtight container.
