Easy Egg Curry
Ingredients
4 hard boiled Eggs, shelled and halved
2 medium cooked Potatoes, peeled and quartered
1 medium Onion chopped fine.
3 medium Onion sliced
1 inch Ginger
4 Green Chillies
2 Red Chillies
4 tsp tomato paste
2 tsp Coriander Powder
3/4 tsp Cumin Powder
1/4 tsp Turmeric
1 tsp Garam Masala Powder
Salt to taste
Method :
- Heat 1 tsp oil/ghee add sliced onions, ginger, green and red chillies saute
till onions are pale. Cool and blend together to a smooth paste.
- Heat 1 tsp oil, add chopped onion fry till pale, add all the powders fry
for a
minute. Add the ground mixture, tomato paste and salt, mix and let it
simmer for 2 minutes.
- Add potatoes and 1/2 cup water and bring to a boil and simmer for 3
mins.
- Add halved eggs, simmer for 1 min. Turn off the heat.
- Garnish with chopped green coriander.
Optinal: Add cream 2 tsp.
