Hi,
I am Latha Sudhakar - married and have a little girl. I enjoy testing my culinary skills and I have come to enjoy bawarchi site quite a bit. I am sharing a quick and easy, not to mention, healthy recipe for a vegetable side dish, "fried" green beans with tofu. Please email me at latha1972@hotmail.com with comments.

Fried Green Beans with Tofu

Ingredients

1/2 lb Green Beans, cut into an inch long pieces. (you can substitute frozen french-cut beans)
1/2 Block Tofu, crumbled
1/4 tsp Mustard seeds
1/4 tsp Turmeric powder
3 - 4 cloves Garlic
1/2 tsp grated Ginger
1 tbsp Oil
Salt to taste

Method:

  1. Fry mustard seeds in hot oil till they crackle.
  2. Add garlic and ginger followed by turmeric. Fry for a few seconds. Add beans and stir fry till cooked, but still a bit crisp.
  3. Add tofu, gently stir. Add salt to taste.

Can be served with Rice or Rotis.
