Potato and Eggplant Stuffed Peppers

Ingredients

4 cubanelle Peppers
3 Potatoes (boiled and mashed)
3 small Indian Eggplant
1/4 cup finely chopped Onion
1/2 tsp Chilli Powder
1/2 tsp Garam Masala
1 tsp chopped Coriander
1 tsp Salt (or to taste)
1 tsp Sugar
1/2 tsp Turmeric powder
1/2 tsp Tamarind paste
pinch Hing
1 tsp Mustard seeds

Method:

  1. Cut tops off peppers, remove seeds, wash and soak.
  2. Boil potatos and mash.
  3. Cut eggplant into small chunks, cook in a little water until soft.
  4. Cook mustard seeds in oil until they pop. Add onions and cook until soft.
  5. Mix the spices together with a little water to make paste. Add this to boiled and mashed potatoes and mix well. Add to mustard seeds and onion.
  6. Add eggplant and mix together. ( a little water can be added if needed ) Stuff peppers and cook in 350 degree oven for about 10 - 15 minutes.
