This Jani from New Jersey. Here are some recipes for quick, complete meals. Slightly Indianized versions of Pastas.

Pasta with Coriander and Coconut Pesto

Ingredients

1/2 lb. Pasta (any shape you prefer, good with Penne, Bowtie, Rotini)
salt to taste
1 tbsp. Oil
1 Onion, minced
1 clove Garlic, minced
1" piece Ginger
1/2 cup grated Coconut (fresh type)
3 Green Chilies
1 small bunch Coriander

Method :

  1. Cook the pasta as per the box instructions.
  2. Grind the coconut, green chilies, ginger and coriander to a fine paste (try not to add too much water).
  3. In the meantime, heat oil, add the onion and garlic, saute for 1/2 min.
  4. Drain the pasta and add to the heated pan. Add the ground mixture, salt and stir well. Serve hot. (Sprinkle grated cheese if you prefer).
