Egg Biryani

Ingredients

2 cups basmati rice
5 eggs
Small piece of ginger, 2 cloves of garlic
1/2 cup ghee
2 spoons dhaniya powder, 1/2 spoon garam masala
1/2 spoon turmeric, 1/2 spoon mirchi powder
1 mirchi finely chopped
1/2 cup coriander (cilentro) grated
1/2 cup mixed vegetables (carrot, peas)
one small onion finely chopped
small seasonings (cumin, jeera, cloves)
Salt, pepper to taste

Method:

  1. Cook the rice and keep it seperate (add a spoon of butter while cooking for added taste)
  2. In a pan fry ghee, seasonings, ginger, garlic and add onions. Fry till golden
  3. Add mixed vegitables, chopped mirchi, dhaniya powder, turmeric, mirchi powder and garam masala
  4. Beat the eggs and add the to the pan. Cook for about 2-3 minutes on medium flame
  5. Add cooked rice, salt, pepper and mix the contents in the pan
  6. Cook for about 5 minutes on a medium-low flame
  7. Add cilentro after removing the pan from the stove. (Add 1/2 spoon lime juice - optional)

Server hot - serves about 3 people.
