Hi, My name is Suhita and live in Washington state with my husband. I love making soups and generally experiment with all kinds of ingredients. Here's one recipe which I tried out recently. I hope u enjoy it!

Curried Red Pepper Soup

Ingredients

1 Large Red Bell Pepper
1 Medium Onion (diced)
1 tbsp Butter
1 cup Water or Vegetable Stock
1/2 cup Sour Cream or Heavy Whipping Cream
1 tsp Curry Powder (Madras Style)

Directions:

  1. Saute onion and pepper in butter over medium heat
  2. When peppers are soft, add the curry powder and stock and cover
  3. Once the peppers are soft, add cream, and puree
  4. Return to low heat and simmer uncovered until a rich soupy consistancy is attained
  5. Add freshly ground black pepper to taste and chopped coriander to garnish. Serve hot!

Makes enough soup for 2 people
