Curried Red Pepper Soup
Ingredients
1 Large Red Bell Pepper
1 Medium Onion (diced)
1 tbsp Butter
1 cup Water or Vegetable Stock
1/2 cup Sour Cream or Heavy Whipping Cream
1 tsp Curry Powder (Madras Style)
Directions:
- Saute onion and pepper in butter over medium heat
- When peppers are soft, add the curry powder and stock and cover
- Once the peppers are soft, add cream, and puree
- Return to low heat and simmer uncovered until a rich soupy consistancy is
attained
- Add freshly ground black pepper to taste and chopped coriander to garnish.
Serve hot!
Makes enough soup for 2 people
