This is Nidhi from Dallas once again with another of my favourite recipes...hope you enjoy cooking it as much as your family and friends enjoy eating it too..this is typical of punjab and also a very healthy food...again learnt it from my mom..i am sure anyone who doesnot enjoy eating spinach will love to eat it in this form. Palak Paneer

Ingredients

Spinach - a bunch fresh
Onions - 2 med
Tomato Sauce- 3 tbsps
Garlic - 6-7 pods
Ginger - a piece
Green Chillies - 3/4 nos.
Paneer or Cottage Cheese -pressed and cut into cubes.
Chilli powder -1/2 tbsp
Turmeric powder -1/4 tsp
Corriander powder -1/2 tbsp
Salt to taste
Oil - 3 tsps
Pure Ghee -to serve

Method

  1. wash spinach very well and put it in a pressure cooker with 1/4 cup of water to cook .Take off after 2 whistles.
  2. cool and blend in a blender.
  3. Now make a paste of 1 onion garlic ginger and green chillies and fry as usual with oil in a wok till golden brown in color.
  4. To this add 1 chopped onion and tomato sauce and fry till the oil leaves the sides of wok.
  5. Add chilli powder, coriander powder, turmeric powder to this and fry for about 2 minutes.
  6. Add garam masala and the pureed spinach to this and add salt finally.Let simmer for about 20 minutes till it becomes thicker in consistency.
  7. Finally add cubed paneer pieces and serve with ghee on top of this and with fresh chapattis.
