Vegetable Biryani
Ingredients
1. Basmathi Rice - 2 cups
2. Mixed Vegetables - 2 cups (Potato, Carrots, Beans, Green Peas and
Cauliflower cut into small cubes)
3. Onion - 1 cut into thin long pieces
4. Yogurt - 1 cup
5. Tomatoes - 2 chopped finely
6. Red Chilly Powder - 1 tsp
7. Dhania Powder - 1 tsp
8. Cloves - 4
9. Cinnamon - 1 inch long piece
10. Cardamom - 3
11. Ginger-Garlic paste - 1 tsp
12. Green Chillies - 4
13.Garam Masala Powder - 1 tsp
14. Turmeric Powder - 1 tsp
15. Mint leaves - 1/2 cup
16. Ghee - 1/2 cup
17. Bay Leaves - 2
Method
Soak the rice in water for 15 minutes. Drain the rice add 4 cups of water
and cook till each grain is separate.
- Marinate all the ingredients from 5 to 15 above in yogurt for 30 minutes.
- Fry the bay leaves and onions in ghee till golden brown. Add the cut
vegetables and saute for 2 minutes.
- Add the marinated masalas to the vegetables, add 1 cup of water , cover
and cook till the vegetables are soft. Once the vegetables are cooked drain the excess water if any.
- Mix the cooked rice with the vegetables and saute for 2 minutes.
- Serve hot with Onion Raita.
