Hi all,
I am Meena Aithala from Lake Charles, LA. One of my friends, Keshavaraj, who
is a scientist (Louisville, KY) came up with an interesting fact (while
experimenting in his kitchen lab!) that tofu can be used as a replacement
for coconut. I know that there are many people out there who want to use
tofu but keep away because of its bland taste. Hope this recipe will make

Avial with Tofu
Ingredients
2 cups of vegetable (hard veggies like green Plantain, Chayote Squash,
Drumstick are preferred. Potato, Carrots can be used) - cut into long
pieces
Tofu - 1/2 cup
Yogurt - 1/2 cup
Jeera - 1/4 tsp
Green Chilli - 1
Salt to taste
Pinch of Turmeric
2 sprigs of Kari pattha
Method:
- Boil the vegetables in water with salt and turmeric.
- Grind tofu, yogurt,
green chilli and jeera and add it to the boiled vegetables. Heat it for just
5 minutes.
- Garnish with karipattha.
