Hi all,
I am Meena Aithala from Lake Charles, LA. One of my friends, Keshavaraj, who is a scientist (Louisville, KY) came up with an interesting fact (while experimenting in his kitchen lab!) that tofu can be used as a replacement for coconut. I know that there are many people out there who want to use tofu but keep away because of its bland taste. Hope this recipe will make you use tofu in your regular cooking. Avial with Tofu

Ingredients

2 cups of vegetable (hard veggies like green Plantain, Chayote Squash, Drumstick are preferred. Potato, Carrots can be used) - cut into long pieces
Tofu - 1/2 cup
Yogurt - 1/2 cup
Jeera - 1/4 tsp
Green Chilli - 1
Salt to taste
Pinch of Turmeric
2 sprigs of Kari pattha

Method:

  1. Boil the vegetables in water with salt and turmeric.
  2. Grind tofu, yogurt, green chilli and jeera and add it to the boiled vegetables. Heat it for just 5 minutes.
  3. Garnish with karipattha.
