Hi Everyone,
I am Deepa Tarun Kumar. My first recipe for Bawarchi was Instant Fruit salad. Being a very enthusiastic person here are two Mexican vegetarian recepies. Hope you will like them.

Vegeatble Fajitas

Ingredients

1 Green Pepper
1 Red Pepper Chopped Julliene
1 Yellow Pepper
1 medium Onion (Chopped fine)
2 red Chillies
1 tspn Black Pepper Powder
1 tblspn Cilantro/corriander leaves
Salt to taste
Oil
7-8 Mexican Tortillas or Home made Chapatis.

Method:

  1. Saute the onion and red chillies in heated oil.
  2. When onion becomes translucent, add the bell peppers. Stir well and cook untill bell peppers become tender.
  3. Add salt, pepper and Cilantro leaves (finely chopped).
  4. Allow to cool.
  5. Roll the above mixture in the Mexican Tortillas or Chapatis. About 1 tbl spoon in each.
  6. Serve as a starter or an entre'. Very Delicious and filling.

Note: Roll the stuffing into the Tortillas just before serving or else they might become soggy.

Mexican Eggplant

Ingredients:

1 Large Eggplant/Brinjal
3-4 Green Chillies
1 tsp Red Chilli Powder.
1 small can Tomato Sauce.
A few pitted Black Olives.
3 tablespoons Chopped Spinach (Fresh or frozen)(Optional)
2 Cups Grated sharp Cheddar Cheese.
Oil, Salt to taste.

Method:

  1. Cut the Eggplant into cubes of 1/2 inch to 3/4 inch thickness.
  2. Place on cookie sheet and dote well with Oil.
  3. Place in preheated oven at 425oF for 25 minutes (or untill soft).
  4. Meanwhile simmer Tomato sauce with green chillies and red chilli powder and Salt.
  5. Add to this Black Olives and Spinach. Cook well untill olives and spinach are soft.
  6. In a cassrole dish layer one half the eggplant, sauce on top of it an d cheese. Repeat these layers. End with Cheese.
  7. Bake uncovered in 350oF preheated oven for 25 minutes.
  8. Serve steaming hot with Rice or Chapatis.
