I'm Varsha and today I will share the recipe of Veg-Shrimp with
you. This was a nervous
experiment, but came out to be good and it's my husband's favourite. Give

Vegetable Shrimp
Ingredients
One bunch Spinach-washed and cut into pieces.
Half of a small Eggplant.
One medium size Potato.
6 medium size Muli.
Medium size Shrimp- 20.
One large onion- finely chopped.
Ginger paste - 1/2 tbsp.
White Vinegar - 2 tbsp.
Turmeric powder- 1 + 1/2 tbsp.
Curry leaves powder- 1 tbsp.
Sugar-1/2 tbsp.
Four dry Red Chillies.
Bay leaves - 2
Panchpuran-1/2 tbsp.
Salt.
Method:
- Wash the shrimp and marinate with Vinegar, salt, and
1/2tbsp. turmeric powder for minimum 1/2 hour.
- Cut potato, muli,and eggplant into small pieces.
- Heat oil in a deep bottomed vessel. Add panchpuran, dry red
chillies and bay leaves. As they start to splutter, add chopped onions. Fry until
golden brown.
- Add vegetables. Fry for two minutes.
Mix turmeric powder, curry powder, sugar, salt and ginger
paste in half-cup water
and pour it into the vegetables. When it's nearly dry, add
shrimp.
After 3 minutes,add spinach and cover it.
Add one glass water and leave on medium flame covered with
a lid.
Cook for 10 minutes. Test the salt, Veg.Shrimp is ready.
